Curry Fried Rice - Quick and Easy Japanese Style

When your kids are craving Japanese curry but you're short on time, this Curry Fried Rice is the perfect shortcut!

This quick and easy fried rice is packed with comforting curry flavor, savory bacon, and sweet vegetables—all stir-fried together in one pan. A splash of soy sauce adds umami depth, while torn lettuce gives it a refreshing finish. It’s a delicious and satisfying meal that comes together in just 15 minutes, perfect for busy weeknights or lunchbox meals.


RECIPE

Servings: 3-4

Time: 15 minutes

Ingredients:

  • 3 strips of bacon

  • 1/2 pc onion

  • 1 small carrot

  • 1 clove garlic, minced

  • 3 eggs

  • 3 cups cooked Japanese short-grain rice (cold or day-old rice works best)

  • 1 tbsp curry powder (Japanese curry powder recommended)

  • 1 tbsp soy sauce

  • Salt and pepper

  • A handful of lettuce leaves, torn

Instructions:

  1. Prep ingredients:

    Chop bacon, onion, and carrot.

    Mince garlic.

    Tear lettuce into bite-sized pieces and set aside.

  2. Sauté bacon and vegetables

    Add chopped bacon and garlic, stir-fry until it starts to brown and release its fat.

    Add onion, and carrot, and stir-fry until fragrant and slightly softened.

  3. Scramble eggs:

    Push ingredients to the side of the pan to make space in the center.

    Crack in the eggs and scramble until half-cooked.

  4. Add rice and seasoning:

    Add the rice and stir everything together.

    Sprinkle in curry powder, pour in soy sauce, and season with salt and pepper. Mix well to combine.

  5. Add lettuce:

    Toss in the torn lettuce at the end, stirring just until it wilts slightly.

 

Tips:

  1. Rice tip: Day-old rice works best for fried rice. If using freshly cooked rice, let it cool slightly before stir-frying.

  2. Add-ins: You can add peas, corn, mushrooms, or leftover rotisserie chicken for variety.

  3. Kid-friendly: Adjust the amount of curry powder depending on your child's spice tolerance. If you use S&B curry powder, reduce the portion if needed as it has a spicier profile.
