Quick and Cozy Curry Udon Stir-Fry
This Curry Udon Stir-fry is easy and comforting for busy weeknights. It is packed with flavor from Japanese curry powder and mentsuyu. Just toss in whatever veggies you have in the fridge—it all comes together in 20 minutes.

Ingredients:
1 serving Udon noodles
3 oz Pork belly
1/4 Onion
1 Carrot
1/8 Cabbage
1/4 Bell pepper
1 tbsp Japanese Curry powder
1 tbsp Mentsuyu
Salt
Sunny-side-up egg (for topping)

Instructions:
Cook udon noodles according to package instructions.
Cut pork belly, onion, carrot, cabbage, and bell pepper into bite-sized pieces.
Heat a bit of oil in a pan. Sauté pork with a pinch of salt until it starts to brown.
Add onion and carrot, and cook until softened. Then add cabbage and bell pepper.
Toss in the cooked udon, mentsuyu, and curry powder. Stir to combine everything well.
Serve topped with a sunny-side-up egg
Tips
Rinse the udon noodles after boiling – This helps remove excess starch so the noodles don’t clump together and stir-fry more evenly.
Use Japanese curry powder – It adds that signature cozy flavor without needing to make curry from scratch.
Toss in whatever veggies you have on hand – It’s a great clean-out-the-fridge recipe, and the flavor of the sauce ties everything together.
Instead of using curry powder melt a small piece of the curry roux block in a bit of hot water (about 2–3 tablespoons) to create a thick, flavorful sauce. Then, add that sauce to your stir-fried veggies and noodles at the end.
