This recipe combines the creamy richness of traditional tiramisu with a unique Japanese twist - warabi mochi.

If you’re unfamiliar with warabi mochi, it’s a Japanese confection with a delicate, jelly-like texture. Unlike regular mochi, which is chewy and sticky, warabi mochi has a soft, melt-in-your-mouth quality. Traditionally made from the starch of warabi (bracken), it’s often substituted with warabi mochiko, a starch derived from sweet potato or tapioca.

In this recipe, I’ve paired the subtle sweetness of warabi mochi with the bold flavors of matcha and mascarpone cream, layered over a soft Costco muffin base. The result? A delightful fusion dessert that’s perfect for fans of both tiramisu and Japanese sweets.

RECIPE

Ingredients:

  • 2 pcs costco muffin

  • 1 tbsp matcha powder (for dusting)

warabi mochi

tiramisu cream

  • ½ cup mascarpone cheese

  • ¼ cup heavy cream

  • 2 tbsp sugar

  • 1 tbsp matcha powder

sweet cream

  • ¼ cup heavy cream

  • 1 tbsp sugar

Instructions:

  1. Prepare Warabi Mochi:
    Follow the instructions on your warabi mochi kit, using warabi mochiko and water - set aside to cool.

  2. Make Matcha Tiramisu Cream:
    In a bowl, whisk together mascarpone cheese, heavy cream, sugar, and matcha powder until smooth and fluffy. Set aside in the refrigerator.

  3. Make Whipped Cream:
    In a separate bowl, whip the heavy cream and sugar until soft peaks form. Keep chilled.

  4. Prepare the Muffin:
    Slice the Costco muffin into three horizontal layers. Using the cup or glass you’ll be serving in, cut the bottom two slices into rounds that fit snugly inside the serving dish. Cut the third slice into bite-sized pieces.

  5. Assemble the Trifle:

    1. Layer one round slice of muffin at the bottom of each cup.

    2. Add a layer of the matcha tiramisu cream.

    3. Place pieces of prepared warabi mochi on top.

    4. Add a layer of whipped cream.

    5. Sprinkle the muffin bites on top of the whipped cream.

    6. Finish with another dollop of tiramisu cream.

    7. Dust the top with matcha powder
