During my recent visit to Hiroshima, I found myself with a rare two hours of "me time." My brother kindly took the kids, and I wandered into Nakau, a popular Japanese fast-food chain. Hungry and nostalgic, I decided to sit down and enjoy a comforting Teishoku meal set, featuring none other than the delicious Oyako-don (親子丼).
Eating alone at a restaurant is a rare treat for me these days. However, it brought back memories of my time living in Japan, when solo meals were a more regular part of my routine. That warm, sweet, and savory bowl of Oyako-don inspired me to recreate the dish at home, this time to share with my family. Ingredients:
3 cups cooked rice
6 eggs
3 chicken thighs
1/2 onion (thinly sliced)
1/3 cup water
1/4 cup sake
1/4 cup mirin
1/4 cup soy sauce
1 1/2 tbsp sugar
1/2 tbsp dashi powder
Mitsuba (or scallions for garnish)

Instructions:
Prep the Ingredients: Start by cutting the chicken thighs into bite-sized pieces and thinly slicing the onion.
Make the Sauce: In a pan, combine water, sake, mirin, soy sauce, sugar, and dashi powder. Heat gently until the sugar is fully dissolved.
Cook the Chicken and Onion: Add the sliced onion and chicken pieces to the pan and cook until the chicken is fully cooked through.
Add the Eggs in Stages: Lightly beat the eggs. Pour about half of the beaten eggs into the pan, cover with a lid, and let it cook for about 1 minute until the egg is almost set.
Final Egg Touch: Turn off the heat, pour the remaining beaten eggs into the pan, cover, and let it sit for another minute to let the residual heat gently cook the egg.
Serve: In a serving bowl, add a portion of the cooked rice. Top it with the chicken, egg, and sauce mixture. Garnish with chopped Mitsuba or scallions.
