Oyako-don Recipe - Simple and Comfort Japanese Food

During my recent visit to Hiroshima, I found myself with a rare two hours of "me time." My brother kindly took the kids, and I wandered into Nakau, a popular Japanese fast-food chain. Hungry and nostalgic, I decided to sit down and enjoy a comforting Teishoku meal set, featuring none other than the delicious Oyako-don (親子丼).

Eating alone at a restaurant is a rare treat for me these days. However, it brought back memories of my time living in Japan, when solo meals were a more regular part of my routine. That warm, sweet, and savory bowl of Oyako-don inspired me to recreate the dish at home, this time to share with my family. It's such a quick and easy recipe that brings comfort and joy, making it a perfect weeknight meal.

Let's dive into this simple yet delicious recipe!


RECIPE

Ingredients:

  • 3 cups cooked rice

  • 6 eggs

  • 3 chicken thighs

  • 1/2 onion (thinly sliced)

  • 1/3 cup water

  • 1/4 cup sake

  • 1/4 cup mirin

  • 1/4 cup soy sauce

  • 1 1/2 tbsp sugar

  • 1/2 tbsp dashi powder

  • Mitsuba (or scallions for garnish)

Instructions:

  1. Prep the Ingredients: Start by cutting the chicken thighs into bite-sized pieces and thinly slicing the onion.

  2. Make the Sauce: In a pan, combine water, sake, mirin, soy sauce, sugar, and dashi powder. Heat gently until the sugar is fully dissolved.

  3. Cook the Chicken and Onion: Add the sliced onion and chicken pieces to the pan and cook until the chicken is fully cooked through.

  4. Add the Eggs in Stages: Lightly beat the eggs. Pour about half of the beaten eggs into the pan, cover with a lid, and let it cook for about 1 minute until the egg is almost set.

  5. Final Egg Touch: Turn off the heat, pour the remaining beaten eggs into the pan, cover, and let it sit for another minute to let the residual heat gently cook the egg.

  6. Serve: In a serving bowl, add a portion of the cooked rice. Top it with the chicken, egg, and sauce mixture. Garnish with chopped Mitsuba or scallions.
