Now, let's take our celery to new heights with a zesty and refreshing pickled version. These Gingery Celery Pickles are not only incredibly easy to make but also add a delightful kick to any meal.
Pickles are a staple in my meal prep routine, and there's something satisfying about crafting a jar of tangy goodness on a lazy Sunday afternoon. The combination of soy sauce, vinegar, sugar, and fresh ginger elevates the humble celery into a flavorful treat that you'll be reaching for all week long.
RECIPE
Servings: 3-4
Time: 10 min + overnight
Ingredients:
4 sticks of celery
2 tbsp soy sauce
1.5 tbsp rice vinegar
1 tbsp sugar
Ginger slices

Instructions:
Begin by slicing the celery sticks into manageable pieces.
In a small pot, combine the soy sauce, vinegar, sugar, and a few slices of fresh ginger. Heat the mixture over low heat, stirring occasionally, until the sugar has completely dissolved. Once melted, remove the pot from the heat and let the mixture cool slightly.
In a tsukemono pickle bowl or any glass container of your choice, arrange the sliced celery. Pour the prepared pickling solution with the ginger slices over the celery.
To ensure that the celery pickles properly, place a small weight on top of the celery to keep it submerged in the pickling liquid. This can be as simple as a small plate or a clean, heavy object that fits inside the container.
Cover the bowl or container with a lid or plastic wrap and refrigerate overnight. Allowing the celery to marinate overnight will infuse it with the flavors of the pickling solution, resulting in perfectly crisp and flavorful pickles.
The next day, your Gingery Celery Pickles will be ready to enjoy! Serve them as a side dish, snack, or add them to sandwiches, salads, or rice bowls for an extra burst of flavor.
