Umami-Rich Roasted Carrots with Dashi Powder

Looking for a simple and umami-rich side dish? Then this recipe is for you.

Adding Dashi powder to roasted vegetables is my personal favorite. Dashi is not only enhances soups but also adds an excellent umami flavor directly to dishes. If you're ready for an easy and flavorful dish, let's get cooking!

  1. Preheat your oven to 425°F (220°C) and line a baking pan with parchment paper.

  2. Peel the carrots and cut them into 2-inch long sticks.

  3. In a mixing bowl, combine the carrot sticks with the olive oil, and open the pack of Dashi and sprinkle it evenly over the carrots in the bowl.

  4. Toss the carrots gently to coat them evenly.

  5. Transfer the seasoned carrot sticks to the prepared baking pan, spreading them out in a single layer.

  6. Place the baking pan in the preheated oven and roast the carrots for about 15 minutes or until they are tender and slightly caramelized, stirring halfway through the cooking time for even roasting.

 

Some Tips for Making Roasted Vegeetables:

  • Evenly Sized Pieces: Cut your vegetables into evenly sized pieces to ensure they cook evenly. This helps to avoid some pieces being undercooked while others are overcooked. Aim for uniformity in size to promote even roasting.

  • Use High Heat: Roast your vegetables at a high temperature, typically between 400-450°F (200-230°C). This high heat helps to caramelize the sugars in the vegetables, resulting in a deliciously golden exterior and tender interior.

  • Space Them Out: Spread your vegetables out in a single layer on the baking sheet, ensuring they have enough space between each piece. Overcrowding the pan can cause the vegetables to steam instead of roast, resulting in a mushy texture rather than crispy edges. If necessary, use multiple baking sheets to accommodate all the vegetables.
