Soba Salad with Yuzu and Ham

Ingredients:

  • 2 servings soba noodles

  • 1 small carrot

  • 1/8 mid-sized daikon

  • 6-8 mini tomatoes

  • 2-3 slices Spanish ham

  • 10-12 shiso leaves

  • edamame

  • sesame seeds

    [Sauce]

    • 2 tbsp soy sauce

    • 2 tbsp rice vinegar

    • 1 tbsp sesame oil

    • 2 tbsp Yuzu extract

    • 1/2 tbsp grated ginger

Instructions:

  1. Begin by preparing the vegetables. Cut the carrot and daikon into thin strips, and slice the shiso leaves. Grate the ginger and set aside.

  2. In a mixing bowl, combine the soy sauce, rice vinegar, sesame oil, Yuzu extract, and grated ginger. This flavorful sauce will be the perfect complement to our salad.

  3. Cook the soba noodles according to the package instructions. Once cooked, drain and rinse the noodles under cold water to stop the cooking process and prevent them from sticking together.

  4. Transfer the cooled soba noodles to the mixing bowl with the sauce. Gently toss the noodles until they are well coated with the flavorful sauce.

  5. Now it's time to assemble our salad! Add the Spanish ham, sliced tomatoes, shiso leaves, edamame, and sesame seeds to the bowl with the dressed soba noodles. Give everything a final toss to ensure that all the ingredients are evenly distributed.

  6. Once everything is nicely mixed, transfer the Yuzu Soba Salad to a serving dish or individual bowls. Garnish with additional sesame seeds and shiso leaves for an extra pop of color and flavor.
