When most people think of sushi, they envision rice and raw fish (sashimi). But did you know you can make sushi with everyday ingredients from your fridge or local market? Temaki Sushi can be sushi without raw fish, it’s versatile and can be adapted to suit everyone’s tastes.
At my house, this dish is a hit with the kids! They enjoy rolling their own sushi with nori sheets and their favorite fillings. For a kid-friendly twist, I used plain rice this time, but for authentic sushi rice, you can season it with sushi vinegar. The choice is yours - customization is part of the fun!
RECIPE
Servings: 4

Ingredients:
Sushi Rice Base:
6 cups cooked rice
(Optional) 4 tbsp sushi vinegar for seasoning
20 sheets nori seaweed
Simmered Carrot:
Teriyaki Chicken:
Tamagoyaki (Japanese Rolled Omelette):
3 large eggs
Pinch of salt
cooking oil
Other Fillings:
7-8 pieces imitation crab (kanikama)
2 cucumbers, julienned
2 packs natto

Rice Cooking Pot (similar to mine)
Instructions:
Prepare the Rice
Cook rice. If using sushi vinegar, gently fold it into the rice while still warm and set aside to cool.Simmer the Carrots
In a small pot, combine strip cut carrot, mentsuyu, water, and mirin. Simmer over medium heat for 15 minutes until tender.Cook the Teriyaki Chicken
Sprinkle chicken thighs with salt and pan-fry on both sides until golden brown.Add sugar, soy sauce, and mirin, and cook until the sauce thickens and coats the chicken. Slice into bite-sized pieces.
Make Tamagoyaki
Beat the eggs with a pinch of salt. Pour into a lightly oiled pan and cook in thin layers, rolling each layer to create a tamagoyaki. Slice into strips.Prepare the Other Fillings
Cut the cucumbers into strips
Separate imitation crab into strands.
Mix natto with its sauce.
Assemble the Ingredients
Arrange all the prepared fillings on a large platter. Place nori sheets and a bowl of rice nearby.Time to Roll
To make a roll, place a sheet of nori shiny side down, spread a small amount of rice, and add your favorite fillings. Roll it up and enjoy!
