  1. Preparing the Gelatin Base - In a small bowl, combine the unflavored gelatin with 1 tablespoon of water, mix well as the gelatin absorbing the water and becoming soft.

  2. In a saucepan, combine water, sugar, and Yuzu juice, gently heat the mixture over low heat, ensuring it doesn't come to a boil. We want to gently warm the liquid to release the yuzu's aromatic oils. Also ensure the sugar has completely dissolved.

  3. Slowly pour the softened gelatin mixture into the saucepan, whisking until the gelatin is fully dissolved, and the mixture appears smooth.

  4. Pour the mixture into individual serving molds or a large glass dish, depending on your preference.

  5. Allow the jelly to cool to room temperature before transferring it to the refrigerator. Let it chill for at least 2-3 hours, or until the jelly has set and is firm to the touch.
