Matcha Tiramisu with Warabi Mochi


Tiramisu with Mochi?!

Do you know Warabi mochi?

It is a Japanese confection. It's one of the Mochi kinds, but the texture is more jelly type, not as sticky as regular mochi. It's traditionally made with Warabi bracken starch, but since it's limited ingredient, there is a substitute, Warabi Mochiko which is made of sweet potato or tapioca. 

This Tiramisu contains this sweet Warabi Mochi, and it’s a delightful combination!


RECIPE

Servings: 2

Time: 30 min

Ingredients:

  • 1 pc costco muffin

[ warabi mochi ]

[ tiramisu cream ]

  • mascarpone cream

  • heavy cream

  • sugar

  • matcha powder

[ sweet cream ]

  • heavy cream

  • sugar

Instructions:

  1. Make Warabi Mochi - I followed the kit's instruction

  2. Make tiramisu cream by mixing Mascarpone, heavy cream, sugar, matcha and whip

  3. Make whip cream by whipping heavy cream and sugar

  4. Slice the Costco muffin into 3 pieces, shape 2 of them into round by using the cup you will use, and cut the 3rd one into bite sizes

  5. Layer the muffin cake on the bottom > tiramisu cream > Warabi mochi > whipped cream > muffin bites > mascarpone cream

  6. Top with some matcha powder
