RECIPE
Servings: 6-8 balls
Time: 30 min
Ingredients:
[ Sushi rice ]
1 cup cooked rice
1 tbsp sugar
1.5 tbsp rice vinegar
1 pinch salt
[ Decorations ]
1/4 pc cucumber - thin sliced, salted
2 pcs red radish - thin sliced, salted
1 slice renkon - 1 pc Renkon to thin slice, cooked in 2 tbsp sugar, 4 tbsp vinegar
6-8 pcs edamame beans - boil
1-2 pcs carrot - boiled with a pinch of salt, shaped into flower
1 pc egg - made into a crepe, thin cut
Instructions:
Prepare the Sushi Rice In a bowl - combine the cooked rice, sugar, rice vinegar, and a pinch of salt. Mix gently until the sugar dissolves and the rice is well coated. Set aside to cool.
Prepare the Toppings
Slice cucumber into long way
Slice red radish
Boil edamame, remove the beans from the pods
Boil sliced carrot for 10-15 min or until it’s cooked, shape it into flowers by using a mold
Make thin egg crepe - beat the egg, heat a pan and drop a scoop of egg mixture, and cut thinly after it’s done
Prepare Renkon - Peel the skin, cut into very thin slices, and put it in water for about 10-15 min. Then in a pot, add sugar and vinegar, once the mixture gets warm, add the Rencon, stir for a few minutes. Set aside to cool
Shape the Sushi Balls & decorate - Place a sheet of saran wrap on a table, place the toppings in the center. Ensure to place the prettier surface of the topping down on the saran wrap considering the other side of the design shows up when you take off the wrap. Then place one tablespoon of cooked rice. When you wrap the rice and topping, pick up one side of the wrap and the diagonal side, then the rest of the side. Now hold the closest part of the rice, using your hand palm to hold the whole part, make it into a ball shape while twisting the saran wrap.
Leave it for 10-15 min before taking off the wrap. So that the topping and rice are attached nicely together.
