  1. Begin by cutting the chicken thigh into bite-sized pieces.

  2. In a bowl, combine the chicken with sake and a pinch of salt, ensuring each piece is well coated. Next, add the potato starch to the bowl and coat the chicken pieces evenly.

  3. Thinly slice the onion and cut the carrot into thin strips. Place them in a microwave-safe bowl.

  4. Add soy sauce, sugar, and rice vinegar to the bowl, stirring to combine. Microwave the mixture for 2-3 minutes until the sugar has dissolved and the flavors meld together.

  5. Heat frying oil in a pan over medium heat. Once hot, carefully add the coated chicken pieces to the pan, frying them until they are cooked through and golden crispy on the outside.

  6. Once the chicken is cooked, transfer it to the bowl containing the vegetable sauce. Allow the chicken to marinate in the sauce for a few minutes, allowing the flavors to infuse and mingle.
