Asparagus Salad with Garlic Soy Sauce Mayo Dressing Recipe
If you're a fan of asparagus, you're in for a treat.
As much as I love grilling asparagus, I love this vegetable in salad. Especially when I toss in the garlic shoyu-mayo (soy sauce and mayonnaise). Some Japanese condiments add a powerful twist to the flavor, and it works perfectly with the crisp of the asparagus.
This Asparagus Salad with Garlic Soy Sauce Mayo Dressing is a flavor explosion that will tantalize your taste buds.
RECIPE
Servings: 3-4

Ingredients:
1 bunch of fresh asparagus
1 can of tuna
2 tbsp mayonnaise
1 tbsp soy sauce
1 clove of garlic
Instructions:
Start by snapping the woody ends of the asparagus spears and peel off about one-third of the bottom part. Cut the asparagus into 2-inch pieces.
Bring a pot of water to a boil. Add a sprinkle of salt to the boiling water. Carefully place the prepared asparagus into the pot and let it cook for 1 to 1.5 minutes. Be careful not to overcook them; we want them to remain crisp. Once done, drain the asparagus.
In a mixing bowl, combine the mayonnaise, soy sauce, and minced garlic and stir well.
Add the cooked asparagus to the bowl of dressing. Open and drain the canned tuna, then add it to the bowl as well. Gently toss everything together.
