RECIPE
Servings: 3-4
Time: 60 min
Ingredients:
1.5-2 lb (20-30 pcs) mini potatoes
1 tsp salt (for boiling)
3 tbsp butter
2 tbsp soy sauce
Shiso leaves
Instructions:
Start by boiling a pot of water and add a teaspoon of salt.
Gently place the mini potatoes into the boiling water and let them cook for approximately 20 minutes or until they are fork-tender. Once cooked, drain the potatoes and set them aside.
In a large mixing bowl, combine the boiled potatoes with a tablespoon of butter, a tablespoon of soy sauce, and thinly sliced Shiso leaves. Gently toss the potatoes until they are evenly coated with the seasonings.
Preheat your oven to 400ºF (200ºC).
Place the coated potatoes on a baking tray lined with parchment paper, ensuring they are spread out evenly.
Take a fork and gently smash each potato, allowing for the perfect balance of crispy edges and fluffy interiors.
Transfer the tray to the preheated oven and bake for 35-40 minutes or until the edges are golden brown and delightfully crispy.
Once out of the oven, let the potatoes cool for a moment before serving. Garnish with additional Shiso leaves if desired.
