In a bowl, beat the eggs with a pinch of salt.
Heat a pan over medium heat. Pour a small amount of the beaten eggs into the pan, roll the omelette into a log (Tamagoyaki style) and repeat until you have 8 pieces. Set aside.
Slice the Spam into 8 pieces.
In a pan, pan-fry the spam slices on both sides until they are golden brown.
Add sugar, soy sauce, and mirin to the pan, stirring quickly to coat the spam slices in the sauce. Set aside.
Place a sheet of plastic wrap on a clean surface and lay a nori seaweed sheet.
Arrange one piece of spam on the nori sheet and spread a thin layer of mayonnaise.
Add one piece of the egg omelette on top of the mayonnaise, then a layer of rice.
Carefully roll the ingredients using the plastic wrap.
Let the rolled sushi sit for a few minutes, unwrap the plastic and slice the roll into bite-sized pieces.
Egg Spam Musubi: This dish is a culinary gem from Okinawa, Japan. I discovered this only a few years ago during a visit to the island. The discovery unfolded at a local street market, where the Musubi was expertly crafted, served fresh, and retained a comforting warmth. My anticipation to savor its flavors reached its peak, but I patiently held off until we got to the planned beach destination.
It is perfect not only as a snack but also as a great breakfast. In fact, I've found it to be an exceptional choice for gatherings, especially when catering to younger palates – it quickly becomes a favorite among the kids. The versatility and appeal of Egg Spam Musubi have made it a staple in my culinary repertoire.
To Shape the Spam Musubi: I use a sheet of saran wrap as below, but if you have a bamboo mat, it helps to secure the shape. Or using a mold also makes the shaping process easier.
Another tip is to keep your hands slightly wet when handling the rice to prevent sticking. This helps to make it easier to spread the rice evenly on the Nori sheet.
