Ingredients:
2 cups cooked rice
vegetable oil to fry the bites
4 oz salmon
1 tbsp mayonnaise
1/2 tsp sriracha
1 tsp soy sauce
scallion
black sesame seeds
Instructions:
In a small bowl, combine the finely chopped salmon, mayonnaise, sriracha, soy sauce and mix well.
Take a small amount of cooked rice and gently mold it into rectangular shapes, around 2 inches long.
In a frying pan, heat vegetable oil over medium heat. Carefully place the shaped rice in the pan, fry the rice until it turns golden brown and becomes crispy on all sides. This should take approximately 2-3 minutes per side. Once crispy, transfer the rice to a plate lined with paper towels to remove any excess oil.
Take each piece of crispy rice and generously spoon the prepared salmon mixture on top.
Garnish them with finely chopped scallions and a sprinkle of black sesame seeds.
Variations:
For an extra pop of flavor, consider adding a squeeze of fresh lemon juice over the assembled bites just before serving.
If you prefer a milder heat, reduce the amount of sriracha in the salmon mixture or omit it entirely.
Experiment with different toppings such as thinly sliced radishes, cucumber, chili peppers, or avocado.

In order to make the rice correctly crispy, I heat vegetable oil in a skillet or frying pan over medium heat and make sure it’s heated before placing the rice. The hot oil helps to transform the texture of the rice, creating a golden brown and crispy exterior. As the rice cooks in the oil, moisture evaporates, allowing the starches in the rice to solidify and form a crispy crust.
