One particular fruit that captures the essence of fall is the lilikoi, also known as passion fruit. Its tart and sweet flavor adds a burst of tropical goodness to any recipe. RECIPE

Servings: 1x 6" round cake

Time: 60 min

Ingredients:

  • 1 box cream cheese (8oz)

  • 1/2 cup sugar

  • 2 pcs egg

  • 1 cup heavy cream

  • 3 tbsp flour

  • 3 lilikoi (passion fruit)

Instructions:

  1. Grease the pan, or set a sheet of parchment paper in a 6” round cake pan.

  2. Start by softening the cream cheese in a bowl. Once softened, add the sugar and mix well until smooth and creamy.

  3. Crack the eggs into the bowl and mix them with the cream cheese and sugar mixture.

  4. Gradually add the heavy cream to the mixture, stirring continuously to create a smooth batter. Finally, add the flour and mix until fully incorporated.

  5. Slice each Lilikoi (passion fruit) in half and scoop out the juicy pulp. Pour the Lilikoi onto the cake dough after it's set in the cake pan.

  6. Preheat your oven to 375ºF (190ºC) and place the cake pan into the oven. Bake for approximately 50 minutes or until the top is golden brown and the center is set.

  7. Once baked, remove the cheesecake from the oven and allow it to cool completely, or enjoy it while it’s hot. The cheesecake can be also chilled in the refrigerator for a few hours or overnight, it's another great way to eat it.

Lilikoi is a tropical fruit also known as passion fruit. It is native to South America but is now cultivated in various regions around the world, including Hawaii, where it is commonly grown. The fruit is small to medium in size and has a vibrant yellow or purple outer skin that wrinkles as it ripens. Inside, the fruit contains a gelatinous pulp filled with black seeds. The pulp is the edible part of the fruit and has a distinct sweet-tart flavor that is both tangy and tropical. Lilikoi is often used in desserts, beverages, sauces, and as a flavoring in various culinary creations. It adds a unique and refreshing taste to dishes, making it a popular ingredient for those seeking a tropical twist in their recipes.
