  1. Preheat the Oven:

  2. Prepare the Cake Pan:

    Grease a 6-inch cake pan with butter to prevent sticking.

  3. Melt the Butter & White Chocolate:

    Cut the butter into small pieces. In a microwave-safe bowl, melt the white chocolate chips in the microwave for 30 seconds, stirring until smooth. Add heavy cream and mix until well combined.

  4. Mix the Egg Yolks:

    In a separate bowl, beat the egg yolks with half of the sugar until creamy. Stir in the melted butter and white chocolate mixture.

  5. Incorporate Dry Ingredients:

    Sift in the flour and matcha powder, then gently mix until you get a smooth green batter.

  6. Whip the Egg Whites:

    In another clean bowl, whisk the egg whites while gradually adding the remaining sugar. Beat until soft peaks form.

  7. Fold in the Egg Whites:

    Gently fold the whipped egg whites into the matcha batter in three additions, being careful not to deflate the mixture.

  8. Bake the Cake:

    Pour the batter into the prepared pan and tap it lightly on the counter to release air bubbles. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.

  9. Cool & Serve:

    Let the cake cool completely before removing from the pan. Dust with matcha powder, drizzle melted white chocolate, or serve with matcha-infused whipped cream for an extra special touch.
