  1. Begin by preheating your oven to 350°F.

  2. Take a moment to separate the egg yolks from the whites.

  3. Grab a sheet of paper towel and generously rub 1/2 tbsp of butter onto the cake pan.

  4. Cut the butter into smaller pieces, and either use a spatula or microwave it for 20-30 seconds until softened.

  5. Add half of the sugar to the softened butter, followed by the egg yolks. Mix these ingredients until they form a smooth and creamy consistency.

  6. In a separate bowl, combine white chocolate chips. Microwave for 30 seconds, stirring quickly until smooth. Add heavy cream to the mix, and blend until well incorporated. Combine this chocolate with the egg mixture.

  7. Introduce the flour and matcha powder to the bowl, ensuring an even distribution. Mix until you achieve a luscious green batter.

  8. In another bowl, add the remaining sugar to the egg whites. Whip these up until they form fluffy, soft peaks.

  9. Carefully fold the whipped egg whites into the matcha batter. This step requires a gentle touch to maintain that delightful fluffiness.

  10. Transfer the completed cake mixture into the prepared pan. To eliminate any unwanted air bubbles, give the cake pan a few taps on the kitchen counter.

  11. Place the pan in the preheated oven and let the cake bake for 25 minutes or until a toothpick comes out clean.
