Ingredients:

  • 1 serving udon noodles

  • 1/4 onion, thinly sliced

  • 2 tbsp butter

  • 1 tbsp miso

  • 1/2 tbsp soy sauce

  • 2/3 cup milk

  • 1/3 cup grated parmesan cheese

  • Italian parsley, chopped, for garnish

Instructions:

  1. Cook the Udon Noodles

    Bring a pot of water to a boil and cook the udon noodles according to the package instructions.

    Once cooked, drain and rinse with cold water to remove excess starch. Set aside.

  2. Sauté the Onion

    In a large pan, melt butter over medium heat. Add thinly sliced onions and sauté until soft and fragrant.

  3. Make the Creamy Miso Butter Sauce

    Lower the heat and add miso, soy sauce, and milk to the pan. Stir until the miso dissolves and the sauce becomes smooth.

  4. Toss the Udon and Parmesan Cheese

    Add the cooked udon noodles to the pan, then add grated parmesan cheese, toss well to coat them evenly in the sauce.

  5. Garnish and Serve

    Plate the noodles, sprinkle more parmesan cheese if desired, garnish with chopped italian parsley.
