Inari Don
Inari Donburi - Sweet and Savory Rice Bowl
Are you thinking of making Oyako Don or Tanin Don (beef and egg rice bowl) but don’t have these proteins on hand at the moment? How about some Aburaage (fried tofu pouch) in the freezer? If yes, I’ve got you covered tonight.
I had the same situation the other day but then remembered that I always keep a few packets of Aburaage in the freezer. Sweet and savory simmered Aburaage pairs wonderfully with egg, making for a perfect and filling dinner in just 20 minutes.

Time: 20 minutes
Ingredients:
cooked rice
3 pcs simmered inari pouch (how to make simmered inari)
4 pcs egg
scallion
shredded nori

Instructions:
Cut the simmered Inari pouch (fried tofu, Aburaage) into bite-sized pieces. (how to make simmered inari)
In a pan, add water, mentsuyu, and mirin, and bring it to a boil.
Add the cut the simmered Inari pouch and let it simmer.
In a small bowl, beat the eggs, then pour half of them into the pan. Cook for a minute over medium heat and sprinkle with cut scallions.
Pour in the rest of the egg, cover the pan, turn off the heat, and let it cook in residual heat.
Add the cooked rice to a serving bowl, spoon the egg and Inari mixture over the rice, sprinkle shredded nori seaweed and enjoy!
Tips:
If you prefer a stronger dashi flavor, you can increase the amount of dashi slightly.
Add sliced onions or mushrooms for extra depth of flavor.
For a touch of spice, sprinkle some shichimi togarashi (Japanese seven-spice) before serving.
