Katsu Sando, a popular Japanese sandwich, is typically made with pork or chicken Katsu, but don't underestimate the deliciousness of a salmon fillet coated in crispy panko breadcrumbs. With a creamy and flavorful tartar sauce, this sandwich is bound to make your picnic day a memorable one.

Ingredients:
4 pcs bread (shokupan, Japanese milk bread if available)
2 pcs salmon fillet
salt and pepper
vegetable oil for frying
1/2 cup panko
[ Katsu Batter ]1 egg
1/4 cup water
4 tbsp flour
[ Tartar Sauce ]
2 pcs boiled egg
1/4 pcs chopped onion
parsley
3 tbsp mayonnaise
salt and pepper
Instructions:
Prepare the tartar sauce by combining the boiled eggs, chopped onion, parsley, mayonnaise, salt, and pepper in a bowl. Set it aside.
In a separate bowl, whisk together the egg, water, and flour to create the batter for the salmon Katsu. Ensure that the batter is smooth and free of lumps.
Season the salmon fillets with salt and pepper on both sides. Dip each fillet into the batter, making sure to coat them evenly.
Coat the battered salmon fillets with Panko breadcrumbs, pressing lightly to ensure the breadcrumbs adhere well to the fish.
Heat vegetable oil in a frying pan over medium-high heat. Carefully place the salmon fillets into the hot oil and fry them until they become golden and crispy. Flip the fillets halfway through to ensure even cooking. This process should take approximately 2-3 minutes per side.
Once the salmon fillets are cooked to a golden brown, remove them from the pan and place them on a plate lined with paper towels to absorb any excess oil.
Cut the bread crust or leave it if you like. Take the slices and spread a generous amount of tartar sauce on both sides of each slice.
Sandwich the crispy salmon Katsu fillets between the bread slices. And cut the sandwiches diagonally or into halves.
