Savory Teriyaki Chicken with Scrambled Eggs Called Teritama Chicken
Teriyaki sauce is a versatile condiment that enhances the flavors of many dishes, but it's most famously associated with Teriyaki Chicken.
However, when you introduce scrambled eggs into the mix, it transforms into a mild yet savory delight. Personally, I find the best way to enjoy this dish is by pouring it over freshly cooked rice, allowing each scoop to deliver a burst of flavor.

Ingredients:
1.5 lbs chicken thigh
1/2 onion, thinly sliced
2 tbsp sake
salt to taste
4 eggs
2 tbsp sugar
2 tbsp soy sauce
3 tbsp mirin
Instructions:
Begin by cutting the chicken thigh into bite-sized pieces.
Thinly slice the onion and set aside.
Heat some sesame oil in a pan over medium heat. Beat the eggs in a bowl and pour them into the heated pan. Gently scramble the eggs until they are soft and slightly runny. Remove the scrambled eggs from the pan and set them aside.
In the same pan, add the sliced onion to the pan and stir-fry until it becomes translucent.
Increase the heat to medium-high and add the chicken pieces to the pan. Season the chicken with a sprinkle of salt and pour in the sake. Cook the chicken for 5-6 minutes or until it is fully cooked through.
Once the chicken is cooked, add the sugar, soy sauce, and mirin to the pan. Stir well to combine all the ingredients and simmer the chicken in the sauce until the liquid begins to evaporate slightly.
As the sauce thickens, return the scrambled eggs to the pan. Quickly stir everything together, ensuring that the chicken and eggs are evenly coated with the teriyaki sauce.
