Citrusy Yuzu Flavored Madeleine - My Childhood Nostalgia with a Japanese Twist

Ever since I was a child, the kitchen has been my playground. From the age of 5 or 6, I started the culinary adventures, and by the time I reached 5th grade, I had almost learned most of the basic Japanese dishes.

Meanwhile, my younger brother found his passion in baking, surprising us all with his Madeleines. Despite the chaos we left behind in the kitchen, there was always a comforting meal prepared with love, topped off with my brother's irresistible dessert.

Fun facts aside, reminiscing about those days inspired me to experiment with Madeleines, infusing them with the citrusy essence of Yuzu, my all-time favorite.

Join me on this journey down memory lane as we recreate a childhood favorite with a unique twist.


RECIPE

Servings: 14-16 pcs

Time: 90 min (15 min prep, 15 min baking, 60 min in fridge)

Ingredients:

  • 2 eggs

  • 1/3 cup sugar

  • 4 oz butter

  • 1 tbsp honey

  • 2 tbsp yuzu extract

  • 1/2 cup flour

  • 1 tsp baking powder

Non-stick Madeleine pan

Instructions:

  1. In a mixing bowl, crack open the eggs and beat them lightly. Add sugar to the beaten eggs and mix until well combined.

  2. Gradually incorporate the flour and baking powder into the bowl, ensuring there are no lumps.

  3. Introduce the Yuzu extract into the mixture.

  4. In a separate microwave-safe bowl, melt the butter until it achieves a smooth, liquid consistency. Once melted, add honey to the butter and stir until evenly distributed.

  5. Slowly pour the butter-honey mixture into the egg mixture, stirring continuously to achieve a homogeneous batter.

  6. Once the batter is well mixed, cover the bowl and let it rest in the refrigerator for 1-2 hours. This step is to prevents the Madeleines from puffing up excessively in the oven.

  7. Begin by preheating your oven to 350ºF (175ºC) to ensure it's ready when your batter is prepared.

  8. Grease the baking pan with melted butter and dust them lightly with flour to prevent sticking.

  9. Spoon a dollop of batter into each mold of the prepared Madeleine pan.

  10. Place the pan into the preheated oven and bake for approximately 12 minutes, or until the edges of the Madeleines turn golden brown.

Madeleines are beloved for their simplicity and elegance, making them a popular choice for dessert or as a snack.
