  1. In a pot, combine the Mentsuyu, water, and mirin. Heat the mixture over medium heat until it becomes warm.

  2. In a separate bowl, create a starch water by mixing the potato starch with water. Gradually add the mixture to the pot while continuously stirring the sauce. Keep stirring until the sauce thickens. Once achieved, turn off the heat and set the sauce aside.

  3. In a bowl, beat the eggs until they are well combined.

  4. Heat a non-stick pan over medium heat and add a small amount of cooking oil. Pour a thin layer of the beaten eggs into the pan, swirling it around to create a layer. As the edges of the omelette start to set, carefully roll it from one side to the other, creating a cylindrical shape. Repeat this process, adding more beaten eggs, until you have a fluffy and multi-layered Tamagoyaki-style omelette.

  5. In a serving bowl, place a generous portion of freshly cooked rice.

  6. Carefully place the Tamagoyaki-style omelette on top of the rice.

  7. Finally, pour the prepared sauce over the omelette and rice, ensuring that it covers the entire dish beautifully.

  8. Sprinkle chopped scallions and sesame seeds over the Wafu Omurice.

What is Omurice (Omu-Raisu)? It is a fusion dish that has its roots in Western cuisine but has become an integral part of Japanese comfort food. It is believed that Omurice was first introduced in Japan during the early 20th century, inspired by Western-style omelettes and fried rice. Over the years, it has evolved to incorporate a variety of flavors and styles, with each region adding its own twist to the classic recipe.

Traditional Omurice is made using ketchup-based fried rice, which is then wrapped in a thin omelette blanket, creating a beautiful and delicious package. However, the Wafu Omurice takes a different route, opting for a more umami-rich and savory flavor profile by incorporating Dashi - a traditional Japanese broth made from fish and seaweed. This subtle but essential change transforms the dish into a comforting delight that warms both body and soul.

We went on a wonderful trip to reunite with old friends and make new memories this summer. What made this trip extra special was the unexpected surprise awaiting us - adorable chickens! My kids took on the responsibility of being egg collectors. It's heartwarming to see them embrace nature and learn where our food comes from while having a blast! And for me, the best part was savoring the fresh egg dishes every morning while staying. And we brought back some of them as a souvenir.
